Why Ancestral Recipes Need to Be Preserved

Many regional recipes live only in the memory of our elders. Here is why ancestral recipes need to be written down, and simple ways to help preserve them.

Almost every Indonesian family has one dish that no one else can quite copy: grandma's rendang, mum's vegetable stew, or a sambal made only for Eid and other holidays. Sadly, most of these recipes were never written down. They pass from hand to hand by watching, tasting and estimating.

Recipes kept only in memory

Family recipes rarely use numbers. They say "a handful", "to taste" or "until it smells right". For someone who has cooked a dish for decades, that is enough. For the next generation, who spend less time in the kitchen, it is hard to follow. When our elders are gone, their recipes can go with them.

Ingredients and methods are changing

Some local ingredients are getting harder to find in cities, such as leaves and spices that once grew in the back yard. Cooking methods are changing too: wood stoves have become gas burners, leaf wrappers have become plastic, and hand-ground pastes have become instant mixes. These changes are natural, but without a record we lose track of how the original tasted.

Food is regional identity

A dish holds many stories: local produce, trade routes, traditions and ways of life. Rendang tells of Minangkabau custom and the tradition of leaving home to seek a living. Gudeg tells of young jackfruit and hours of patient cooking in Yogyakarta. Papeda tells of sago as a staple in Maluku and Papua. From Sumbawa comes siong sira, cooked in a yellow broth without coconut milk.
