  1. Fry the shallots, garlic, ginger and lemongrass until fragrant.

  2. Add the water and bring to a boil.

  3. Add the clams and chillies and cook until the shells open.

  4. Add salt, tomato and basil, cook briefly and serve.

  5. Discard any clams that do not open.
