How to Make
Grind all the base genep ingredients and fry in coconut oil until cooked and fragrant. Cool.
Clean the chicken, rub with calamansi juice and salt, then rinse.
Mix half the paste with the cassava leaves, stuff into the chicken and sew or pin closed.
Coat the whole chicken with the rest of the paste.
Wrap in several layers of banana leaf, then in foil.
Steam 2 hours, then roast at 180°C for 45 minutes. Or simply steam for 3 hours.
Unwrap and serve with rice, plecing kangkung and sambal matah.
