How to Make
Briefly grill or dry-fry the chillies, shallots, garlic and shrimp paste.
Pound the lemongrass until fine, then add the chillies, shallots, shrimp paste and salt.
Add the grilled fish and pound coarsely until combined.
Add lime juice and mix.
