How to Make
Heat a small wok without oil. Add 2 tbsp rice and a little water and cook until half done.
Crack 1 duck egg on top, add half the seasoning and coconut. Mix and spread up the sides of the wok.
Cover briefly until the egg is half set.
Turn the wok upside down over the fire until the top is dry and crusty.
Remove and sprinkle with the remaining coconut, dried shrimp and fried shallots.
Kitchen tip
Do not use oil. The crust forms because the rice sticks to the wok and is toasted directly over the fire.
