How to Make

  1. Steam the grated coconut with the salt and a pandan leaf for 10 minutes. Set aside.

  2. Mix the glutinous rice flour, rice flour and salt. Add the pandan juice little by little, kneading until smooth and mouldable.

  3. Take a little dough, flatten it, fill with palm sugar and roll into a tightly sealed ball.

  4. Bring plenty of water to the boil. Add the balls and cook until they float, then 1 minute more.

  5. Lift out, drain and roll in the steamed coconut.

  6. Serve the same day.

Kitchen tip

Seal each ball tightly so the sugar does not leak while boiling. Finely shaved palm sugar melts into syrup more quickly.
