How to Make
Dry-toast the rice flour briefly, then cool.
Mix the flour and salt. Sprinkle in the pandan juice little by little, rubbing with your fingers until damp and crumbly, not wet. Sieve for fine crumbs.
Half-fill a mould with crumbs, add palm sugar in the centre and cover with more crumbs without pressing.
Steam over strong steam for about 5 to 7 minutes until cooked.
Push out of the mould onto a banana leaf and top with grated coconut.
Serve warm.
