How to Make
Mix the rice flour, tapioca and spice paste. Add the coconut milk little by little until the batter is thin. Stir in the egg and lime leaves.
Add the peanuts and mix well.
Heat the oil in a wok. Splash a little hot oil up the side of the wok.
Pour a spoonful of batter with peanuts onto the side of the wok so it spreads thinly.
When the edges start to dry, push it down into the oil and fry until crisp.
Drain, cool and store in an airtight jar.
