How to Make

  1. Peel the bananas and slice each lengthwise into 3 or 4 strips without cutting through the base, or press flat with a pestle.

  2. Mix the rice flour, plain flour, cornflour, sugar and salt. Add the cold water little by little until the batter is thick and smooth.

  3. Heat plenty of oil over medium heat.

  4. Dip the bananas in the batter until evenly coated.

  5. Fry until golden and crisp, turning once. Drain.

  6. Serve warm with srikaya jam.
