How to Make
Clean the crayfish and trim the feelers and legs.
Boil or steam for 5 minutes until red and drain.
Fry the paste, lemongrass and ginger until fragrant.
Add the tomato sauce, chilli sauce, oyster sauce, sugar, salt and water.
Add the crayfish and toss until well coated and the sauce thickens.
Sprinkle with spring onion and serve.
