Aceh's coffee-house coffee milk: Robusta strained through a cloth, a little condensed milk, then pulled until frothy.

Equipment

  • Cloth coffee strainer
  • Two stainless pitchers
  • Small pot

Method

  1. Put the coffee in the cloth strainer, pour over boiling water, and pass the brew back through the strainer 2–3 times to concentrate it.

  2. Put the condensed milk and sugar in a pitcher.

  3. Pour in the coffee, then 'pull' it back and forth between two pitchers from a height until frothy.

  4. Serve hot in a glass.

Barista tip

Sanger comes from 'sama-sama ngerti' (mutual understanding): coffee with just enough milk and sweetness, less sweet than regular coffee milk.
