How to Make
Mix warm milk, yeast and sugar and leave 10 minutes.
Beat the eggs, combine with flour, salt and the yeast mixture. Stir until smooth.
Rest the batter 1 hour until bubbly.
Just before cooking, stir in the baking soda and baking powder dissolved in 1 tbsp water.
Heat a thick martabak pan over medium heat, pour in batter 1.5 cm deep and spread to the sides.
When lots of holes appear, sprinkle a little sugar and cover until cooked.
Remove, spread with butter, add fillings, fold in half and cut.

The pan must be evenly hot. Too hot and the base burns before the honeycomb forms.
