How to Make
Heat the oil and fry the spice paste until fragrant and cooked, about 5 minutes.
Add the beef and stir until coated with the paste.
Add the tomato, cabbage and stock. Cook until the cabbage wilts.
Add the noodles, sweet soy sauce and salt. Toss well.
For the dry version, cook until the liquid is absorbed. For the soup version, add another 300 ml stock.
Add the bean sprouts and spring onion, toss briefly and remove from heat.
Serve with emping, pickled shallots and a squeeze of lime.
Kitchen tip
Cardamom and cumin give Mie Aceh its aroma. Toast them briefly before grinding to release the fragrance.
