  1. Char the shallots, garlic, galangal and turmeric until fragrant, then bruise.

  2. Boil the water with the charred spices, lemongrass and bay leaves.

  3. Add the pineapple, tamarind, sweet soy sauce and salt.

  4. Add the fish and chillies. Cook 10 to 15 minutes.

  5. Add the tomatoes and basil, cook briefly and serve.
