How to Make

  1. Mix fish, ice water and salt. Add the tapioca flour and mix well.

  2. Pinch small, irregular pieces with the tip of a spoon and boil until they float. Drain.

  3. Fry the prawn heads with garlic until red, add the water, simmer 20 minutes and strain.

  4. Bring the stock to a boil and add jicama, mushrooms, salt and pepper.

  5. Add the fish balls and cook briefly.

  6. Serve with glass noodles, spring onion, celery and fried shallots.
