How to Make

  1. Fry the paste until cooked. Cool.

  2. Mix the fish, coconut, lime leaves, palm sugar, salt and paste. Knead until sticky.

  3. Take a tablespoon of mixture and wrap and press it around a lemongrass stalk.

  4. Grill over charcoal, turning, until cooked and browned.

  5. Serve with sambal matah.
