How to Make

  1. Boil the chicken until cooked, remove and shred. Strain the stock.

  2. Fry the paste in butter until fragrant.

  3. Add the cinnamon, cloves, nutmeg, cardamom and lemongrass and fry briefly.

  4. Add to the stock with salt and simmer 20 minutes.

  5. Put rice cake, noodles, chicken, egg, carrot and fritters in bowls.

  6. Ladle over the hot broth and top with celery and fried shallots.
