How to Make
Mix the beef, garlic, salt, pepper, sugar and egg white. Knead while adding the ice water little by little.
Add the tapioca and mix until the paste is springy and even.
Cut the tofu into triangles or make a slit in the middle and scoop out a little tofu.
Fill the tofu firmly and neatly with the meatball paste.
Steam for about 25 minutes until the filling is cooked.
Serve straight away, or fry briefly until golden. Eat with chillies and sweet soy.
