Cold Brew (Coffee Shop Batch)

Coffee steeped in cold water for 14–18 hours. Smooth, sweet and low in acidity. Made as a concentrate for bar stock.

Base recipe makes 10 cups. Quantities update automatically.

Equipment

  • 1.5 litre glass or stainless container with lid
  • Cloth or paper filter
  • Scale
  • Storage bottles

Method

  1. Put the coffee in the container, add the water and stir gently until all grounds are wet.

  2. Cover and steep for 14–18 hours in a cool room or the fridge.

  3. Strain twice: first through a coarse sieve, then through cloth or paper.

  4. Store the concentrate in sealed bottles in the fridge for up to 7 days.

  5. To serve: 100 ml concentrate + 100 ml water or milk + ice. For iced coffee milk, use 60 ml concentrate per cup.

Barista tip

One litre of this recipe makes about 850 ml concentrate, enough for 8–10 drinks. Label each bottle with the brew date.
