How to Make
Boil the ribs and discard the first water. Boil again in clean water for 2 hours.
Grind the kluwek with the spice paste.
Fry the paste with lemongrass, bay leaves, cinnamon, cloves and nutmeg until fragrant.
Add it to the ribs with salt and palm sugar.
Simmer 45 minutes more until the ribs are very tender.
Serve with fried shallots, spring onion and lime.
