How to Make

  1. Boil the papaya flowers with a little salt, squeeze and discard the water.

  2. Fry the anchovies until crisp and set aside.

  3. Fry the shallots, garlic and chillies until fragrant.

  4. Add the papaya flowers, tomato, salt and sugar and stir.

  5. Add the anchovies, stir briefly and serve.
