How to Make

  1. Boil the chicken until cooked. Remove and shred. Strain the stock.

  2. Fry the paste with lemongrass, lime leaves and galangal until fragrant.

  3. Add it to the stock with salt and sugar. Simmer 15 minutes.

  4. Put glass noodles, cabbage, chicken and egg in bowls.

  5. Ladle over the hot broth and sprinkle with koya, celery and fried shallots.
